Yogurt & Cucumber Dip served with Ritz Crisp & Thin

One of my cherished childhood memories is going on picnics with my whole family. The excitement of the countdown, plotting and planning with my cousins, rising earlier than usual on the morning giddy with anticipation, the adults all  busy with preparations, cooking copious amounts of food and packing them in big metal containers, then all of us piling up in the different cars and setting off, waving madly as the cars passed each other. How I miss those innocent, fun filled days.
Here in the UK I wait for summer so that we can go for picnics and spend the day soaking in the peace & lazing around in the green countryside. This summer my in-laws are visiting us, incidentally last weekend was my father-in-law's birthday, we decided to organise a picnic to celebrate the day. We made some cucumber & tomato sandwiches, spicy chicken puffs and blueberry muffins. We also had some Ritz Crisp & Thin  with a quick yogurt & cucumber dip, strawberries & cherries, to drink we had tea and fruit juice.

Recently I had attended the Ritz Masterclass where we were treated to a lovely selection of dips to go with the newly launched Ritz Crisp & Thin. I was so inspired, I wanted to try out a new dip of my own. This dip recipe I developed, is a really easy & quick one and perfect to serve in parties. Let me share the recipe with you.

This dip is inspired by the Indian raitas {yogurt dips served with fried Indian breads called parathas}. It's is a healthy dip made without any oil/cheese/mayo/sugar. The grated cucumber adds a nice crunch without being too obvious, while the pomegranate seeds bring in a blast of sweet flavour, the spices adds to the depth of flavour~ the paprika adds subtle heat, while the cumin brings in a rich, slightly nutty flavour, and the garlic brings in it's own zing. Mint & coriander makes the dip really fragrant. It takes about 15 minutes to prepare, however if you are in a rush, you could make this ahead and keep chilled in the refrigerator. This dip nicely compliments the Ritz Crisp & Thin or any other crips.
